- Palak Paneer recipe
Tofu is used in here. In a pan add green chilies, spinach just for 2 to 3 minutes, saute it and grind the mix. In a pan, add oil, cinnamon, cardamom, cloves, cumins, onions, ginger garlic paste, tomatoes, garam masala, Kasuri Methi, coriander powder, salt and fry. Add the ground mix and leave it until boils. Add tofu, mix well and switch off. Being a green leafy vegetable, spinach is rich in iron content and other vitamins.
- Vegetable Biriyani
Heat oil in a pan. Add cumin seeds, onions, ginger-garlic paste and saute well. Add the vegetables and fry until half cooked. Add coriander powder, garam masala, chilli powder, green chillies, salt and cook for 5 minutes. Add lemon juice. Once the water from veggies is absorbed, remove half of them and add a layer of rice. Repeat the layering by adding vegetables and rice. Keep in low flame and cook for 10 minutes. Serve the tastiest Biriyani with coriander.
- South Indian kurma
Karma is nutritiously rich with a variety of vegetables. Heat the oil in a pan. Add pepper, cinnamon, cardamom, clove, turmeric, green chilli, chilli powder, garam masala, garlic-ginger, onion, salt and saute them well. Add vegetable and cook on low flame. In the meantime, blend the coconut milk and cashew, add it to vegetables with sufficient quantity of water. Cook over medium flame for 20 minutes with occasional stirring. Serve it with hot rice.
- Aloo Gobi
A dish prepared with potatoes and cauliflower with flavorful tomato sauce, spices and chillies. Heat oil in a pan, add cumin seeds, onion, green chillies, turmeric, salt, tomatoes, ginger-garlic paste, garam masala and stir fry. Add potatoes, cauliflower, and mix well. Cook in simmer and stir occasionally for 20 minutes. Garnish with coriander and serve hot.
- Medu Vada
This can be served as entre, side dish and snack. Pre-soaked urad dal is ground well in a blender. Now add chopped onions, green chillies, ginger, curry leaves, black peppercorn, salt and mix well. In a thin plastic sheet, spread some oil and place a spoonful of batter and press it to a doughnut shape. Now slowly dip this in a pan containing oil in a medium flame. Toss them until it turns golden brown. Take it out and serve with sambar and chutney.
- Vegetarian Potato and Cauliflower recipe
Mash tomato, garam masal, chilli powder, turmeric, cumin and salt. In a heated pan with oil, add in onions, potato and saute well. Add cauliflower, sufficient water and cook in medium flame. Add in spice mix and stir for 8-10 minutes. Switch off. Garnish with cilantro and serve with hot rice.
Pressure cook the lentils in cooker and set aside. Now add in mustard, urad dal, hing, green chillies, curry leaves, onions, tomatoes,salt and saute well. Now mix with the pressure cooked lentils, add sambar powder, salt and fresh coriander leaves and again pressure cook for a whistle. Switch off. Now delicious sambar is ready to serve.
- Mixed Vegetable Soup
In a pressure cooker, add in chopped carrot and beet-root, sliced beans, lady finger, drum stick, chopped onions, garlic, tomato, sufficient amount of water, salt and cook them for 6-7 whistles. Strain the liquid soup. In a heated pan, add mustard, blended cumin, garlic and peppercorn paste, hing and soup. Bring it to boil and add fresh cilantro. Serve with hot rice.
